On a day trip from vacationing in Cuernavaca, Mexico we came across this colorful restaurant appropriately called, "Los Colorines" in Tepoztlán, an ancient village in the mountains south of Mexico City. Some say it's the Mexican equivalent of Sedona, AZ. Residents have made an effort to keep it unsullied from modern commercialism. The clay pots are called "ollas de barro," which heat evenly and are used for all-day cooking over a direct flame imparting an earthy flavor to the soup.
